Easy Tortilla Soup

This is an extremely easy recipe, perfect for those nights you want a quick meal that feeds the whole family. I normally don't like anything that has soup in the description because the only thing I think of is I wont get a full belly from this. I tell you this makes a plentiful helping .

So this is everything you'll need:
1 can of Rotel salsa
1 can of Corn
1 can of Black Beans
1 can of Cambell's Fiesta Nacho Cheese Soup
1 can of Chicken Broth
2 cans of chunk chicken in a can (You can also use any kind of chicken like a rotisserie which gives it a better taste than canned)
1 packet of taco seasoning (choose your own heat)
A lime or 2 (Optional)
Of course this meal wont be what it is without the tortilla chips


Heat up a pot at med. temperature drop in the chicken and pour half the content of the taco seasoning on top.

Take a spoon and saute' the two until taco seasoning is mixed well with the chicken and you hear the sizzle in the pot.
                   

Now add the Rotel salsa,Corn, Black Beans, the remaining taco seasoning and Chicken Broth stir all together. (Hint: Drain the Black Beans run with water just so the juice from the can doesn't turn your soup black.

Add your Cambell's Fiesta Nacho Cheese Soup then stir together.


Cut a lime wedge and squeeze the juice into the soup drop the lime in the pot. (Optional)
Now cover with a lid and simmer on low for 15 minutes.


I like to serve my soup in a bowl surround it with the tortilla chips on the side. Douse some sour cream on top, shredded cheese (or I like to use the Queso Fresca Cheese that crumbles mmmm...) and cut a lime wedge out on the side to squeeze when ready to eat.
Of course you can add any kind of topping you would like!
